That's amore

Friday evening I made Josh's favorite dinner - Parmesan Chicken. Apparently it is now Beau's favorite meal as well. He devoured an entire piece of chicken all by himself (and then ate three cookies after that). I feel bad because most of my pictures of Beau are of him eating...but, if he is awake, he is eating - that's his "thing."


Melinda's Parmesan Chicken
Ingredients: around a pound of thinly sliced boneless, skinless chicken breasts; 6 oz. bag of Italian Croutons; 1 cup of grated Parmesan cheese; 2 eggs; butter; a jar of your favorite spaghetti sauce (or you can make your own if you choose to be an over-achiever); shredded mozzarella cheese
  • Preheat oven to 350 degrees and lightly spray a 13 x 9 baking dish with no-stick spray(occasionally you might need to have a small spare dish on hand because all of the chicken does not always fit into the one).
  • Place the croutons in a food processor and chop until very, very fine.
  • In a shallow dish mix together croutons and 1 cup of Parmesan cheese. Remove half of mixture and save for another day.
  • In another shallow dish whisk eggs.
  • On the stove over medium high heat, melt a tablespoon or so of butter in a skillet.
  • Dredge chicken one at a time - first in egg, coating both sides and then in crouton/cheese mixture, coating well on both sides.
  • Place in skillet and cook on both sides until golden brown.
  • Remove from skillet and place in baking dish.
  • Repeat all steps with remaining chicken.
  • Once all chicken is browned and lying flat in the baking dish(es), pour spaghetti sauce generously over the top.
  • Sprinkle mozzarella cheese over the top (just as you would a casserole dish).
  • Cover with aluminum foil and place in oven.
  • Bake covered for 20 minutes then remove foil and bake another 8-10 minutes.

*Serve over a bed of spaghetti noodles with a salad and bread.
